Southern California has had a string of super hot days over the past week. I’ve been trying to run and cook but I just can’t bring myself to do much but laze around in front of a fan. We don’t have air conditioning which means it gets really hot in our apartment, so cooking is not very realistic right now. I apologize for my cooking absence but you can blame the sun! I have been eating a lot of vegetables and fruit thanks to the heat – I love you sun! Anyway, I decided the ol’ blog needed a good post today.

Carmelized Onion, Peach & Poppy Seed Dressing

1 tbs Earth Balance Butter (vegan butter)

1/4 onion, chopped

1 tbs brown sugar

1 small peach (or about 4-5 frozen peach slices)

2 tbs vegetable oil

1 tbs poppy seeds

This one is really easy and requires minimal cooking (yes!).

Start by cutting your onion. Leave the pieces fairly large.

Next, melt the butter in a large frying pan. Once it has melted add the onions and brown sugar. Mix it well.

Cook the onions until they just begin to turn translucent. Allow them to cook for a few minutes. Add the peach, onion, and vegetable oil to a blender. Blend until smooth and creamy. Then stir in the poppy seeds.

This dressing is quite thick. If you prefer a thinner dressing, add a bit more oil or soy milk.

The salad pictured below is arugula, cherry tomatoes, banana, avocado, and cracked black pepper (I feel fancy just typing that).

I also have to tell everyone that today is pretty much the best day ever – my best friend is moving here (2 hour drive away) from Luxembourg. I get to see her tonight for the first time in a year. She’s also 7 months pregnant. I’m bursting with excitement!

I am going to whine for a bit. I’m sorry.

Today I tried sprinting. It didn’t go very well. Of course, I got frustrated and quit after my (slow) 1 mile sprint. I think I gave up before I even went running because I haven’t lost any weight.

(Yes, I took a picture of my phone because I’m not techno-savvy!)

So you can see my frustration. I’ve burned 5200 calories in a little over a week and haven’t lost any weight. I know – I’m building muscle but it’s still frustrating. I couldn’t even run 1 mile without stopping (dying) about two weeks ago. Now I can run 5 miles and I’m sad because I haven’t lost weight. How silly am I?

So, after trudging home like a sweaty reject, I decided that the diet has to change if I want to lose weight. Instead of feasting on carbs, I went to the store and bought a lot of veggies and made a big ol salad!

After scarfing his pancakes last night, my husband suggested that my “fruit syrup” could be used as a salad dressing. I rolled my eyes at the time, but it seemed like a good idea today!

Summery Sweet Salad Dressing

1 cup peaches

1/2 cup strawberries

1/2 cup raspberries

optional 2 tsp strawberry almond milk yogurt

1 tsp red wine vinegar

1 tsp balsamic vinegar

Blend together and enjoy!

My salad consists of the following:

a lot of spinach

some carrot shreds

a handful of cherry tomatoes, cut in half

half an avocado, sliced in long strips

a handful of almonds, chopped

___________________________________

To cut the avocado into long strips, cut it in half length-wise then make thin slices and scoop out with a spoon!

The sweetness of the salad dressing balances out the “bitter” taste of the spinach. Tons of veggies, a sprinkle of protein, and some healthy fat!

Now, instead of wallowing around the house, I am going to go for a fun run – because it’s fun and I love to run. I’m going to keep the following quote in mind (I found it on twitter so I’m not sure who said this):

When asked: “Why do you run?”

Reply: “Because I can’t fly.”

I’ve seen a picture for Lime & Avocado salad floating around on pinterest for a while, and I finally decided to make my own version. I’m not too sure what the original recipe is because I just drooled at the picture and read the description. I added Thai Sweet chili sauce for a mild kick. This recipe makes enough for 2!

Spicy Thai & Lime Avocado Salad

1 avocado, cut into small cubes

2 medium tomatoes, cut into small cubes

small bunch cilantro, chopped

1 tbs lime juice

1 tbs Thai sweet chili sauce

Put everything in a bowl and mix it gently (the avocado can get a little mushy if you’re rough)! Serve immediately.

I also celebrated my first 4th of July yesterday. I found the best t-shirt at Walmart. It’s ugly Christmas sweater party meets American Independence – heck yes!

My husband and I are still trying to figure out what’s up with the cinnamon sticks and the rose. A rose? Any ideas?

I also did my makeup festively, although I don’t think face painting and gaudiness is as prevalent here as it is on Canada Day.

We also watched fireworks!
