Here’s a super easy meal to make in under 30 minutes!
Soba Noodle Stir Fry
1-2 packages of Soba Noodles (I buy ready to cook noodles from Ralph’s)
2-3 tbs Soba Noodle Sauce or Teriyaki Sauce (If your noodles come with a packaged sauce like mine do, simply follow the directions on the packaging)
1/2 to 1 package 14 oz Firm Tofu
2 cups Mushrooms, sliced
2 cups Sugar Snap Peas
1-2 tbs Vegetable Oil
Sriracha Sauce for the tofu – it adds a spicy kick and flavor to the tofu pieces
Onion, Carrot, and Broccoli are also great in this stir fry – the choices are endless I tell ya!
Note: If you use a similar ready-to-cook soba noodles (pan frying 2-3 minutes), follow this recipe! If you need to cook your soba noodles longer, start by cooking your noodles then follow this recipe!
Start by draining the water from the tofu package then place the tofu on some paper towel to soak up extra water. This prevents the tofu from leaking water into your stir fry!
Add a tablespoon of vegetable oil to a frying pan and turn on to medium heat. While it warms up, cut your tofu into bite-size pieces then place them in the frying pan. I added sriracha sauce to my tofu because we love spicy food in this house. Completely optional!
Fry the tofu for about 5 minutes, then add the sugar snap peas. After about 2-3 minutes add the mushrooms and saute until the mushrooms look cooked. I love when the veggies in my stir fry are a little crispy!
